The anchovies marinated with lemon are an excellent seafood appetizer of the Italian coasts, an opportunity to rediscover the blue fish of our seas by combining the pleasure of savoring an appetizer with fresh summer flavors.
A dish that does not need to be cooked, the ancient lemon-based marinating technique will be the “cooking” of our appetizer which is easy to make and an excellent ally for our well-being.
INGREDIENTS (for 6 people)
- 500 g of anchovies already cleaned
- 30 ml vinegar
- 4 lemons
- 1 clove of garlic
- 2 fresh red chillies
- pink peppercorns to taste
- 6 sprigs of parsley
- salt
- extra virgin olive oil to taste
PREPARATION
It starts with the anchovy marinating phase, creating an emulsion based on lemon juice, parsley, garlic, salt, vinegar and extra virgin olive oil. To obtain a homogeneous liquid, the use of a mixer is recommended.
Then place the already cleaned anchovies in a pan with the inside facing upwards. Cover with the previously prepared emulsion, add the chopped chilli pepper and the pink peppercorns. The preparation must rest for at least 5 hours in the refrigerator. The acidity of the lemons will be the best “cooking” of the anchovies.
After the necessary time, the marinated anchovies can be placed on a serving dish and garnished with a drizzle of oil, lemon zest and sprigs of parsley.
