Ingredients:
- 3 Golden Apples
- 3 Eggs
- 180 grams of flour
- 180 grams of butter
- 180 grams of cane sugar
- ½ glass of lemon juice
- 2 tablespoons of powdered sugar
Melt the butter in a bain-marie over very low heat. Once melted, let it cool well. Peel the apples, cut them into pieces of about 2 cm. and put them in the bowl with the lemon juice and mix very well.
In a non-stick saucepan, bring the whole eggs with the brown sugar to 45 ° C. Then pour the mixture into the bowl of the planetary mixer and whip everything until the mixture is whitish and fluffy, even if the brown sugar will give a darker color.
Add the sifted flour and cinnamon, mixing with a spatula from bottom to top without removing the mixture. Add the melted butter now at room temperature and continue to mix.
Finally add the pieces of apple and mix for a few more minutes. Pour the mixture into a previously greased and floured hinged pan and bake in a preheated oven at 175 ° C for at least 40 minutes and in any case until the surface is colored. Remove from the oven and leave to cool completely on a wire rack. Sprinkle with icing sugar.
