Baldalucco is a village in Liguria where there are many good food products like the excellent oil, Slow Food beans and Brandacujun. The origin of the name comes from nearby Provence, in fact in Provençal “brandar” means “shake”.
The term refers to the method of preparation of this dish of stockfish boiled and creamed with garlic, parsley, lemon and extra virgin olive oil. Holding the pan between the legs, cover it with another dish and shake it vigorously, until you get a perfect amalgam between all the ingredients.
But let’s come to the recipe of this delicious dish of the Western Ligurian tradition.
Ingredients and doses (for 6 people):
• 1 kg of cod
• 1 kg of potatoes
• two cloves of garlic
• a bunch of parsley
• a lemon
• an egg yolk
• extra virgin olive oil
• rustic bread
• salt
• black pepper
Preparation:
Soak the cod in plenty of cold water for a whole day, changing the water several times.
After the day, boil it in plenty of water. Peel the potatoes and boil them separately. Peel and finely chop the parsley, together with the garlic. Drain the cod, the potatoes and cut them into small pieces. Peel and bone the fish, transfer all in a bowl, together with the chopped garlic and parsley. Squeeze the lemon juice and pour it over the mixture. Add the egg yolk, salt, a ground pepper and extra virgin olive oil.
Work all energetically, with a spoon, to mix well the ingredients until you get a fairly soft puree. Cut the bread into slices and toast in the oven. Serve the Brandacujun lukewarm, soaked in olive oil, accompanied by slices of toasted bread.
