A simple but perfect recipe for a dinner for two. The tartare of red prawns with mango with mint oil combines very well balanced aromas and flavors, for a refined and highly effective appetizer!
INGREDIENTS FOR 2 PEOPLE
200 g of red prawns, very fresh and blast chilled
1 not very ripe mango
mint leaves
extra virgin olive oil
salt
pepper
Let’s start preparing this refined dish by making mint oil. In the mortar, pound the mint leaves and then leave them to macerate in the olive oil. When you feel that it has taken the scent, strain the mixture.
At the same time, clean the mango by peeling the skin and cutting the pulp into cubes and then beat it quickly with the blade of a knife. Shell the very fresh and excellent quality prawns, take care to keep the heads aside for subsequent preparations (eg a fish broth). Remove the black dorsal thread and proceed to coarsely chop the prawns with a knife.
On the serving dish we arrange a pasta bowl and inside it alternate a layer of mango with one of shrimp pulp until we have the mixture. Remove the pasta bowl and sprinkle the composition with mint flavored oil. A grind of black pepper and a little salt will complete the seafood appetizer. Fresh, refined and tasty.
