1. Soften two leaves of isinglass in cold water for a few hours and wring them out before adding them to the mixture, or prepare 6gr of Agar Agar.
  2. Take a pot and heat up:
  • 300gr of Aperol
  • 200gr of red orange juice
  1. While the mixture is warming up, add the isinglass leaves or the Agar Agar and blend them with a spoon.
  2. Make the mixture cool down until it reaches room temperature.
  3. Filter the mixture with a strainer and put it in a siphon, then seal it.
  4. Keep the siphon upside down, charge a small gas cylinder and shake it for at least 30 seconds.
  5. Put the siphon into the refrigerator for at least 8 hours and leave it upside down.
  6. Shake the mixture once more before serving it.
