The secret of this dish? Buy fresh oysters, indeed very fresh and with controlled origin! It is preferable to choose those of the sea that contain all the scent of their habitat, even once at home. INGREDENTS
12 Oysters
1 glass of Champagne (alternatively you can use Prosecco Cartizze)
2 egg yolks
1 tablespoon of cooking cream
Grated bread to taste
We proceed by washing the oysters under running cold water to eliminate all the impurities that may be present on the valve. Paying attention, open the oysters with a sharp knife and keep the internal liquid aside.
In a bowl, mix the liquid from the oysters, the cream, the two egg yolks and the glass of Champagne. Once all the liquid ingredients have been incorporated, the oysters are passed into the mixture, one at a time, and then lay down in their shell.
Transfer the oysters to a baking tray lined with parchment paper and sprinkle with breadcrumbs. Turn on the oven in grill mode and bake for 5 minutes or until a golden crust forms.
