Fully understanding Ligurian cuisine means savouring its fresh seafood. But Liguria in much more! Over the course of time, the Ligurian hinterland has been able to welcome and give life to splendid vineyards that enrich the entire coast everywhere!
In our Region the land embraces the sea with a recipe that you can also try at home: marinated langoustine with fresh seasonal grapes and pistachios; simple ingredients that represent the beauty (and the flavours) of this place!
The recipe is quick and easy to make: start by shucking the langoustines and take care to keep the heads to one side (which can be a good ingredient for excellent soups). After heating the oven to 95° C, place the whole crustaceans in it for five minutes.
Then focus on the white grapes, which must be fresh and firm. Start washing them and with some patience peel them one by one and remove the inner seeds cause they can be unpleasant to taste.
That’s it! Now just serve the langoustines, the chopped pistachios and few grains of grape on a plate.
Complete your recipe dressing the langoustines with an high quality certified Ligurian olive oil and some leaves of fresh basil that will give freshness to a dish that can become a main course or an appetiser depending on your needs!
